Have you ever tried to recollect a particular dish that you ate as a child but do not have your mom’s recipe because it was never written down – it was always a given that everyone knew what it was and how it was prepared. My mom put together a dish which included hamburger meat and elbow macaroni that was easy to prepare but so good for a quick meal. I thought, today, is the day I am going to work through this and see what comes out.
Olive Oil – 1 Tablespoon in deep skillet or Dutch oven pan. Hamburger meat – 1 pound. 2 cups of elbow macaroni cooked. 1 white onion diced. 1 tsp or 1 pod crushed garlic, 1 tsp salt and pepper, 1 can (14 1/2 oz) of diced tomatoes, and 1 can (8 oz) of tomato sauce.
Fry the hamburger meat, then add and saute the onion, garlic, salt and pepper. Then add the diced tomatoes with liquid and the tomato sauce. Lastly, add the cooked macaroni.
I served this with a salad (lettuce/tomato,etc.) and, of course, wine or iced tea.
